This strain produces underlying esters of pear and melon which work well with hop and malt derived notes. It’s medium to high alcohol tolerance is well-suited for strong Scotch-style ales or barleywine beers. This is a versatile strain that can be neutral at the low end of the recommended fermentation temperature range or provide more esters at the higher range. Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales and can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.
Use for: Ale, Wine/Mead/cider, Distilling
Alcohol Tolerance: Medium - High (8%-12%)
Optimum Fermentation Temperature: 65-70 F
